How do you store eggs?
Store eggs at 12°C or below (Do not freeze)
Store away from strong odours
Rotate stock — Use earliest date first
Stack boxes of eggs no more than six high

How do you handle eggs properly?
Wash hands before handling eggs
Use only clean, uncracked eggs
Use clean, sanitized utensils and equipment

Preparing eggs for eating
Cook eggs thoroughly
Hold cold egg dishes below 4°C
Hold hot egg dishes above 60°C
Never leave egg dishes at room temperature for more than 1 hour (including preparation and service)
